Consumer preference studies help manufacturers gain insights into how their products are perceived by consumers by evaluating the sensory attributes of products such as taste, texture, aroma and appearance. By analysing the data gathered from these studies, companies can refine their products to better meet consumer expectations, driving product innovation and commercial success.
Consumer preference studies involve comparisons between two or more products and looks to test the appeal of products to consumers and are designed to gather information on how consumers perceive different sensory aspects of food and beverages. Using a representative sample of the target market, consumers are asked to evaluate the sensory characteristics of a product and provide feedback on their preferences.
How consumer preference studies work
This method utilises a large pool of consumers (minimum 100 participants) to complete the assessment of samples during a session. The assessors receive a thorough initial brief based on the method and tasting protocol before consumers can assess the product. This can be completed on the product as a whole or compared to a second product, or consumers can be asked to perceive and identify the attributes from a provided list and provide insights on how much they like the product and how likely they are to purchase it.
Time-based methods can also be applied to identify the attributes as they appear and disappear from the moment they take the first bite or sip through to the moment they swallow and beyond. This method captures the flavour, aftertaste and mouthfeel, delivering manufacturers with a time-based sensory map if required.
